Scalloped bracing was discontinued in late 1944 for all models, including the 000's. There were a few modern exceptions to 5/16" rule, including the 000-18GE, 000-18A, and 2014+ 000-18. Those three used 1/4" scalloped bracing. I suspect that sales of the reworked 000-18 encouraged Martin to make the change to scalloped bracing for the 000-28.

So, I think 1/4" GE Series bracing is the best compromise, unless you intend to push it harder with a pick. Then there is position. Most 14 fret 000's after 1938 are rear braced, right to the present day. OM's and a few 14 fret 000 models are forward braced. On a Custom Shop guitar I would tend to go with the forward bracing.
