iRacing is a simulator, not a game. Sure you can race with a controller, but the whole point is to simulate a real car which in real life you wouldn't drive with a controller. You just don't have as much precision or feel without the angle of rotation or force feedback or pedals. With that aside, yes it'll be harder to race with a controller.

That will map your controller to 60 deg and make everything much less sensitive. You can change that number at any time by opening the settings tab in the sim and adjusting the top slider (wheel angle). So if you find this is too sensitive or not enough, you can tweak it a bit. The dead zone is annoying, but you don't really want one.
