Depends what you want the car to be. If you want a drag car buy a Drag Pak as it comes loaded with a solid axle. If you want a wicked fast street car, stick with the IRS. Remember one version of these cars was sold as 9 second capable off the showroom floor.

With a solid-axle car, you can adjust the instant center to make the body separate from the rearend, and smash the tires into the track. The Squat Factor

SRA>IRS for drag racing/launching and weight ... In place of the venerable solid axle found in the rear of regular Mustangs lies an independent rear suspension (IRS) system. Even though the 2001 model was the first SVT Mustang with IRS, much has changed for 2003. Upgrades include revised bushings and stiffer spring rates for the coupe.
