Actually, the endlinks attach to the struts. But the effect is the same - when the front of the car rises or drops equally (side to side) there won't be any bar action going on. But there will be a little resistance to the front rising coming from friction in the bushings in the chassis-side brackets.

Removal of the sway bar frees up the independent action of each side of the front wheel/suspension thereby allow better weight transfer. The long and short of it is, no, the sway bar isn't required on a drag car, but would be a necessary item on a road racer. Not all cars in the 60's or eariler came with sway bars.
