Triple are the best if you do close racing, the awarness of what's around you is really great (probably same for VR but i never tried it), if you manly do let's say rallye, i think ultrawide makes more sense If you go triples, get some that support G-sync (some Free-sync are compatible for G-sync) as it will make the configuration easy 1 level 1

You could probably get a normal simrig triple stand (e.g. simlabs) and just cut the height down to what you need. Keeps the orientation between the monitors from changing and you can easily (relative) slide it back and forth on top of the desk. I would recommend marking out where it should be for racing so it winds up in the right spot every time.

A 32:9 display would probably be cool due to how wide it is without bezels. Samsung makes one (the CHG90) and Dell does too (higher resolution, 1440p vs. 1080p, but lower refresh rate).
